Honey Garlic Jerk Chicken Skewers

WOWZERS these chicken skewers have tons of flavor. Spicy, sweet and savory all rolled into these chicken pieces. I cook all my chicken meal preps in the air fryer because it is quick and super easy. They also turn out perfectly.


Honey Garlic Jerk Chicken Skewers

There’s just something beautiful and delicious about skewers! Especially ones filled with meat!! The flavor on this chicken is ON POINT!! I’m so excited about my lunches this week!

Equipment

  • 1 Air Fryer
  • 1 Pressure/Rice Cooker
  • 1 Sauce Pan
  • 1 Fry Pan
  • 1 Large Mixing Bowl
  • 1 Large Cookie/Broiler Sheet
  • 4 Glass Lunch Containers

Ingredients
  

  • 1-1/2 lbs Chicken Breast
  • 4 cups Jasmine Rice
  • 2 cups Pineapple Chunks
  • Diana's Jerk Seasoning (recipe on my site)
  • 2 tsp Baking Powder

Honey Garlic Sauce

  • 4 tbsp Light Butter Spread (I use I cant Believe its Not Butter)
  • 1/2 cup Keto Honey Substitute (Wholesome Yum)
  • 1 tsp Franks Red Hot Cayenne Sauce
  • 6 tsp Minced Garlic
  • 1/2 tbsp Seasoned Rice Vinegar
  • 1/2 tbsp Reduced Sodium Tamari
  • 1 tsp Ground Ginger
  • 1 tsp Smoked Paprika

Instructions
 

  • Make my jerk seasoning per recipe on this website OR use your own! Set aside
  • Stick your wooden skewers in water to soak
  • Cut chicken breast into bite size pieces and place into a bowl or a big cookie sheet
  • Mix the jerk seasoning to coat all your chicken pieces
  • Assemble your skewers leaving room at the bottom for your fingers
  • Start cooking your rice now!
  • Air fry 4 skewers at a time at 400 for 15 minutes, flipping half way or whenever it beeps at you
  • Whisk your sauce ingredients in a sauce pan on high. Once comes to a boil, turn down to low
  • Take your pineapple chunks and fry in a pan on high to brown. I poured a bit of the jerk chicken juices from the air fryer into the fry pan and they turned out perfect!
  • When your chicken skewers are cooked, place onto a cookie or broiler sheet and repeat the process with all your skewers
  • Once all of your chicken skewers are all cooked, take a basting brush and coat with your sauce. Leaving some sauce aside.
  • Assemble your bowls with your rice and pineapple chunks then top with two chicken skewers each. Brush on the last of your sauce onto your chicken and enjoy!

+ 6 points for the rice.
