Chicken Al Pastor Bowls
Equipment
- 1 Air Fryer
- 1 Microwave
- 2 Large Mixing Bowls
- 4 Meal Prep Containers
Ingredients
- 24 oz Boneless Skinless Chicken Thighs
- 2 cups Cilantro-Lime Rice (I used Uncle Ben's)
- 2 cups White Corn
- 1-1/2 cups Cabbage Mix
- 1-1/3 cups Pineapple Tidbits in pineapple juice
- 2 tbsp Wholesome Yum Keto Honey Substitute
- 2 tbsp Al Pastor Seasoning
Instructions
- Cut your chicken into bite size pieces and put into a large bowl.
- Mix your chicken with the seasoning, 1/2 cup pineapple juice from your tidbits can, and honey.
- Marinate for 30 minutes to 1 hour.
- Air fry your chicken in two batches at 400 for 18 minutes each batch.
- When each of your chicken batches are done, put into a clean bowl and set aside.
- While your second batch of chicken cooks, warm up your corn if frozen and microwave/cook your rice.
- Once your chicken is done, drain your pineapple and put into air fryer for 10 minutes. This is optional but trust me it is SO good this way!
- Assemble your bowls with the cabbage at the bottom and the rest any way you choose and ENJOY!
