  • 2 Large Mixing Bowls
  • 4 Meal Prep Containers

Ingredients
  

  • 24 oz Boneless Skinless Chicken Thighs
  • 2 cups Cilantro-Lime Rice (I used Uncle Ben's)
  • 2 cups White Corn
  • 1-1/2 cups Cabbage Mix
  • 1-1/3 cups Pineapple Tidbits in pineapple juice
  • 2 tbsp Wholesome Yum Keto Honey Substitute
  • 2 tbsp Al Pastor Seasoning

Instructions
 

  • Cut your chicken into bite size pieces and put into a large bowl.
  • Mix your chicken with the seasoning, 1/2 cup pineapple juice from your tidbits can, and honey.
  • Marinate for 30 minutes to 1 hour.
  • Air fry your chicken in two batches at 400 for 18 minutes each batch.
  • When each of your chicken batches are done, put into a clean bowl and set aside.
  • While your second batch of chicken cooks, warm up your corn if frozen and microwave/cook your rice.
  • Once your chicken is done, drain your pineapple and put into air fryer for 10 minutes. This is optional but trust me it is SO good this way!
  • Assemble your bowls with the cabbage at the bottom and the rest any way you choose and ENJOY!
