Sweet and Sour Chicken & Rice Bowls
I love Chinese food, especially the kind that is breaded and deep fried! This is the perfect lightened up version without the calories and Weight Watchers points!
You don’t have to give up your favorite foods! Just find better healthy ways to make them!
Sweet and Sour Chicken & Rice Bowls
This is one of my favorite dishes I always used to order when going out for Chinese Food. It has been forever since I have eaten it and now I am excited to be able to again with making a lightened up version!The chicken is ONLY 2 points!!! You can even substitute the rice with cauliflower rice to cut down points even more. I love white rice and won't give it up.
Equipment
- 1 Air Fryer
- 1 Sauce Pan
- 1 Pressure/Rice Cooker
- 1 Large Mixing Bowl
- 4 Glass Lunch Containers
Ingredients
- 1-1/2 lbs Chicken Breast Diced
- 2 cups White Rice
- 2 cups Pineapple Chunks
- 3 tbsp Corn Starch
- 3 tsp Black Pepper (optional)
Sweet and Sour Sauce
- 7 tbsp Sugar Free Ketchup
- 3/4 cup Apple Cider Vinegar
- 1/4 cup Swerve Granulated Sugar
- 1/3 cup Swerve Brown Sugar
- 1-1/2 tbsp Lite Soy Sauce
- 1-1/2 tsp Garlic Powder
- 1/2 cup No Sugar Applesauce
- 1/2 tbsp Seasoned Rice Wine Vinegar
- 1/8 cup Pineapple Juice
Instructions
- Cut up your chicken into bite size pieces and set aside
- Set Air Fryer to 400
- Take 1/3 of your chicken, add to a large ziplock bag and add corn starch – enough to lightly coat
- Add to your air fryer in a single layer and cook for 18 minutes, flipping around twice during this time frame. Depending on your air fryer, may be less or more
- Dump your cooked chicken into a large mixing bowl
- Continue to follow the above process until all of your chicken is cooked
- Drain your pineapple (if not fresh) and add to your air fryer. Cook for 7 minutes. This is optional but turns out delish!
- Add your sauce ingredients to your pan and heat to melt sugar into your sauce
- When your rice is done, add to your glass dishes
- Pour sauce in with your cooked chicken, add pineapple and mix until it is all coated
- Add your chicken/pineapple mix to your bowls
- Top with green onion, sesame seeds and extra sauce if you wish

Total of 8 Weight Watchers points for entire bowl!
The sweet and sour chicken is ONLY 2 points! If you want, swap out the white rice for cauliflower rice and make the entire meal only two points.
