Equipment

  • 1 Air Fryer
  • 1 Large Bowl
  • 1 Rice/Pressure Cooker
  • 1 Large Tray (for cooked chicken)
  • 4 Lunch Containers

Ingredients
  

  • 1.5 lbs Boneless Skinless Chicken Thighs
  • 1 cup White Rice
  • 1 cup Pineapple Chunks

Marinade Sauce

  • 1/4 cup Wholesome Yum Keto Honey
  • 2 tbsp Dijon Mustard
  • 1 tbsp Light Olive Oil
  • 1 tsp Minced Garlic
  • 1 tbsp Low Sodium Soy Sauce
  • 1 tsp Smoked Paprika
  • Salt & Pepper to taste (optional)

Instructions
 

  • Whisk marinade sauce in a large bowl and marinate chicken for 30 minutes.
  • Once you are about to cook your chicken, start cooking your rice.
  • Air Fry your chicken at 400 degrees for 14 minutes, flipping half way and brushing more marinade on top. You will do these in two batches.
  • Once your chicken is all cooked, air fry your pineapple chunks for 4-5 minutes or longer if you prefer.
  • Assemble your bowls with 1/2 cup cooked rice, pineapple chunks and sliced chicken thighs. ENJOY!
