Sweet and Spicy Crispy Chicken Alfredo
My Sweet and Spicy Crispy Chicken Alfredo dish offers a delightful balance of flavors and textures that make meal prepping a breeze while satisfying your taste buds. This meal combines the rich creaminess of Alfredo sauce with the irresistible crunch of crispy chicken, all elevated by a hint of sweet and spicy kick. The perfect meal prep!
Equipment
- 1 Air Fryer
- 1 Large Pasta Pot
- 1 Large Strainer
- 1 Large Mixing Bowl
- 4 Lunch Containers
Ingredients
- 16 oz Kirkland Lightly Breaded Chicken Bites
- 8 oz Al Dente Carba Nada Garlic Fettuccine (dry)
- 1/2 cup Sugar Free Sweet Chili Sauce
- 2 tbsp Wholesome Yum Honey Substitute
- 2 tsp Sriracha
- 1/2 tbsp Olive Oil
- 1 tbsp Minced Garlic
- 3/4 cup Half and Half
- 1/2 cup Chicken Broth/Stock
- 2 tbsp I Can't Believe It's Not Butter Spread
- 1/2 cup Parmesan Cheese (freshly grated)
- Salt & Pepper
- Parsley
- Red Pepper Flakes
Instructions
- Cook pasta in a large pot of salted water
- Once your water almost comes to a boil, put your chicken in the air fryer at 400 for 14 minutes. Be sure to shake around a couple times during cooking. When done cooking, just leave in the air fryer.
- Once your pasta is cooked, drain while leaving 1/2 cup of the pasta water.
- In your pot, melt your butter and olive oil.
- Once melted, add garlic until fragrant.
- Add the chicken broth, scraping any brown bits and simmer for 2 minutes.
- Stir in half and half and let simmer for 3 minutes until the sauce thickens slightly. Add in salt, pepper and pepper flakes if you want a bit more heat.
- While that simmers, mix in a bowl your chili sauce, honey and sriracha and set aside.
- Add your pasta to the sauce and toss to coat. Stir in your freshly grated parmesan, reserving some for your garnish.
- Take out your chicken that has been sitting in your air fryer and dump into a large bowl, pour sauce over and toss until all pieces are coated.
- Evenly divide your pasta in your four lunch containers then do the same with your chicken.
- Garnish with more parmesan, parsley and pepper flakes. ENJOY!
