Thai Peanut Chicken & Noodle Bowls
I decided to change things up for the week and have noodles instead of rice! The best part of these noodles are they're only 30 calories, zero sugar, 6 grams of fiber and the soak up all the flavor in whatever sauce you use.I collected different bits of peanut sauce recipes then tweaked for my own taste buds to come up with these delicious bowls. The BEST part here friends is each of these bowls are ONLY ONE point! I am not even kidding!After my pictures, I actually pour my sauce in with the goodies, stir and let everything just soak up the sauce.
Equipment
- 2 Fry Pans
- 1 Sauce Pan
- 4 Glass Storage Containers
- 4 Condiment Containers
Ingredients
- 12 oz Ground Chicken
- 14 Kibun Noodle Packs
- 6 cups Mixed Cabbage
- 4 tbsp Sweet Red Pepper
- 1/2 cup Chopped Green Onion
- 8 tbsp Fresh Chopped Cilantro
- 1/4 cup Crushed unsalted peanuts
Diana's Thai Peanut Sauce
- 1/2 cup PBfit Peanut Butter Powder
- 1 tbsp Swerve Brown Sugar
- 2 tbsp Sugar Free Maple Syrup
- 4 tbsp Unsweetened Almond Milk
- 1 tbsp Rice Wine Vinegar
- 2 tbsp Lite Soy Sauce
Instructions
- Pan fry your ground sausage with salt and pepper, drain and set aside.
- While your sausage cooks, mix your sauce ingredients in a sauce pan just until the brown sugar melts. Set aside to cool down slightly.
- Rinse and drain your noodles then put into your 2nd fry pan on medium heat. Add your green onions, and red sweet peppers.
- Take your sauce and pour some in each of your condiment containers.
- Pour the rest of your sauce into your noodles.
- Assemble your bowls and top with crushed peanuts.
Notes
Total of 1 Weight Watchers points.
I do not cook my cabbage so when I reheat these the cabbage has a slight crunch.
