Bacon, Pickle and Pineapple Pizza
Call me crazy but if you like pickles then you will like this! This may be very much passed being outside the norm but I had to try it and it was actually delish!
I have always been a sweet pickle fan rather than dill pickles. However, when I started using Weight Watchers I switched over to dill since they are 0 points. These pickles here however on the sweeter side so they have points. Thanks to my friends at Wickles Pickles who sent me a couple jars of their delicious pickles to try out. WOW seriously, I have been hooked ever since! I have to make sure I have the points for these specific ones but let me tell you… they are so very worth it!




Bacon, Pickle and Pineapple Pizza
HOLY PICKLES PEOPLE! Ok seriously friends, you've got to try this to believe it. It was incredible. Don't you roll your eyes at me until you give this a chance. The sweet, spicy and salty combo on this pizza is spot on. Do you love pickles? Have you tried them on pizza?
Equipment
- 1 Oven
- 1 Cookie Sheet
Ingredients
- 1 Cut da Carb Flatbread
- 14 Pickles of your choice
- 3/8 cup Lite Shredded Mozzarella (I love Trader Joe's)
- 3 tbsp Bacon Pieces/Bits (I love Kirkland brand)
- 1 Dole No Sugar Pineapple Tidbit Containers
- 1 tbsp Light Olive Oil
- 1/2 tsp Dill Seasoning
- 1/2 tbsp Red Pepper Flakes
- 3 tbsp Ranch Dressing (I use Bolthouse Farms)
Instructions
- Preheat the oven at 375 degrees.
- Place your flatbread on a lightly sprayed cookie sheet then spray the top of your flatbread. I use Pam cooking spray.
- Once your oven is preheated, bake your flatbread at 375 for 2 minutes, flip and bake another 1 minute.
- Once that is done, take out and lightly spread olive oil all over your flatbread.
- Sprinkle the cheese, bacon and pineapple and bake for 7 minutes.
- Take out and place your pickles on top and bake another 6 minutes. This will help not having your pickles dry out.
- Once done, take out and add your dill and pepper flakes.
