Pulled Pork and Pancakes
Trust me friends, if you haven’t tried this then you MUST! It’s crazy good! 🤯
I’m a huge fan of the @premierprotein pancakes. They taste even better than ones I could make AND they have 15 grams of protein in 3 pancakes.
Pulled Pork and Pancakes

Equipment
- 1 Pressure Cooker
- 1 Microwave
- 1 Small/Medium Sauce Pan
Ingredients
- 5 oz Pork Shoulder (cooked and shredded for pulled pork)
- 3 Premier Protein Pancakes (use your favorite pancakes)
- 3 tbsp Sugar Free Maple Syrup
Skinny BBQ Sauce
- 4 tbsp Sugar Free Ketchup (I use GHughes)
- 1-1/2 tbsp Worcestershire Sauce
- 1 tbsp Hot Sauce (I use Franks)
- 1 tbsp Apple Cider Vinegar
- 2 tbsp Swerve Brown Sugar Alternative
Instructions
- Place your pre-seasoned pork shoulder in the pressure cooker and pour 1 can of beer over. (I season with a bbq rub)
- Cook on the meat cycle (roughly 90 minutes)
- Once your meat is done, heat up your pancakes in the microwave for 1 minute then flip and another minute
- Mix your sauce ingredients and bring to a quick broil then turn down to simmer right after
- Take out your pork and shred in a bowl then pour sauce over and mix all up
- Layer your plate starting with a pancake then top with pork, another pancake and repeat
- Pour your warm maple syrup on top and enjoy!
