Street Corn and Bacon Pizza
I am obsessed with street corn! Also known as Mexican Elite, Mexican Food Corn or Mexican Corn on the Cob. I am here for whatever anyone wants to call it because it is SO GOOD!
It is pretty much corn on the cob smothered in a sauce made with mayo-sour cream mix and sprinkled with cotija cheese and fresh cilantro. I could eat bowls of this stuff all day long!
Street Corn and Bacon Pizza
This my friends has got to be one of the most delicious pizza's I have ever made. If you love street corn as much as I do then you have GOT to try this one! I love any kind of corn but street corn is my all time favorite! I once had it on a taco food truck and I have never looked back.Have you had street corn? Do you call it that? Equipment
- 1 Oven
- 1 Cookie Sheet
Ingredients
- Cut da Carb Flatbread
- 2/3 cup Roasted Corn (I use either Trader Joe's or Del Monte)
- 4 tbsp Bacon Pieces/Bits (I love Kirkland brand)
- 1/2 cup Lite Shredded Mozzarella (I love Trader Joe's)
- 1-1/2 tsp Kinders Blackened Cali Rub (use your fav spicy seasoning)
- 1 tbsp Chopped Fresh Cilantro
- 1/2 oz Cotija Cheese
- 1 I Can’t Believe It’s Not Butter Spray
Crema Sauce
- 1 tbsp Light Sour Cream
- 1 Juice of a Lime
- 1/2 tsp Swerve Granulated Sugar
Instructions
- Preheat the oven at 375 degrees.
- Place your flatbread on a lightly sprayed cookie sheet then spray the top of your flatbread. I use Pam cooking spray.
- Once your oven is preheated, bake your flatbread at 375 for 2 minutes, flip and bake another 1 minute.
- Once that is done, take out and spray with Light Butter Spray. You can use olive oil if you prefer.
- Sprinkle your cheese, add corn, bacon and seasoning.
- Bake for another 11 minutes. Watch for your desired browning.
- When done, take out and top with more seasoning, cotija cheese, cilantro and drizzle of crema.
