Equipment

  • 1 Air Fryer
  • 2 Small Mixing Bowl

Ingredients
  

  • 5 oz Snapper
  • 2 tsp Blackened Seasoning (I use Daks)
  • 2 small Tortillas
  • 2/3 cup Diced Mango
  • 1 Mini Sweet Red Pepper (diced)
  • 1/2 cup Shredded Red Cabbage
  • 1 tbsp Cilantro
  • 1/3 cup Non Fat Greek Yogurt
  • 1 tbsp Honey (I use Wholesome Yum Keto Substitute)
  • 1-1/2 tsp Lime Juice (add more for your liking)

Instructions
 

  • Season both sides of the Snapper
  • Air fry at 400 for 20 minutes, flipping half way through.
  • While your fish is cooking, dice your mango, red pepper and cilantro then put into a small bowl.
  • Squeeze a lime or add 1/2 tsp lime juice to the bowl of fruit and veggies and mix. Set aside.
  • In your other small mixing bowl, whisk your yogurt, honey and 1 tsp lime juice and set aside.
  • Once your fish is cooked, take out and place on a plate.
  • Put your tortillas into the air fryer at 400 for 2 minutes, flipping half way through. If you want them lighter, cook for 1 minute.
  • Lay out your tortillas and top with cabbage, Snapper, mango salsa and drizzle of your crema. SO GOOD!
