Breakfast Bagel Sandwich

These are so simple, delicious and low in Weight Watchers points! There are tons of different ways you can stuff these yummy bagel thins which makes it one of the best breakfast choices.

Meal prepping breakfast sandwiches are always a great way to be prepared and enjoy your breakfast at work.


Breakfast Bagel Sandwich

I love bagels but they are 9 points! These bagel thins from Thomas Bagels are delicious and ONLY 3 points so there is no guilt but you still get to eat the bagel!
These make a great meal prep option for any time of the day! Just wrap in foil then place into a sandwich bag and keep in the fridge for up to 5 days.

Equipment

  • 1 Donut Pan
  • 1 Oven
  • 1 Toaster

Ingredients
  

  • 4 Thomas Bagel Thin
  • 12 slices Canadian Bacon Rounds
  • 2 cups Egg Beater (or 4-8 eggs) your choice
  • 4 slices Velveeta Cheese

Instructions
 

  • Preheat oven to 375
  • Pour your egg beaters or whisked eggs into 4 sprayed donut tins in your tray. This is super convenient if you have one! If not, cook your eggs any way you want!
  • Place your canadian bacon on paper towels and press down slightly to get any excess moisture out
  • Once your oven is preheated, bake your eggs for 25 minutes. (watch them as all ovens vary cooking times)
  • Toast your bagels for half the time as usual. (this is optional since you can either reheat in microwave or toast before eating!)
  • Unwrap your cheese while you're waiting for your eggs
  • Once your eggs are done, assemble your sandwiches starting with cheese, canadian bacon then your egg

Notes

Total of 5 Weight Watchers points!
When reheating, I usually wrap with a paper towel and heat for 45 seconds, turn over and heat for another 30. Microwaves vary.
You could also reheat in the air fryer if you wish! 400 degrees for 2 minutes then check it!
You could also use the toaster to reheat the bread while heating your meat, egg and cheese in the microwave.
