Cheesy Chorizo Omelette
I love a good big omelette, especially one that doesn’t include tons of Weight Watchers points! I bought chorizo chicken sausage links and WOW they are delish!
Add in melted cheese and you have yourself a cheesy breakfast!
Cheesy Chorizo Omelette
I love grabbing items out of my fridge and throwing them all together into an omelette. I have had these chorizo chicken sausage links for a week and finally ate one! SO GOOD!This entire omelette is only 5 points!
Equipment
- 1 Fry Pan (large)
- 1 Small Fry Pan
- 1 Mixing Bowl (for eggs)
Ingredients
- 1 Aidells Chorizo Chicken Sausage Link
- 4 large Eggs
- 1 servingg Daks Original Red
- 3/8 cup Spinach
- 1 tbsp Yellow Onion – diced
- 1/8 cup Lite Mexican Cheese (Trader Joes)
- 2 tbsp Light Sour Cream
Instructions
- Fry your onions and chorizo until just before onions brown
- Scramble your eggs with spinach and Daks original red
- Pour your eggs into the large fry pan on medium and cook until the middle is still slightly runny
- Sprinkle most of your cheese then top middle with onions and chorizo
- Flip ends of your omelette and top with cheese, green onions and sour cream
