Butternut Squash, Cinnamon & Apple Yogurt Bowl

You could just call this a Fall Bowl which is what I ended up calling it on my Instagram back in October of 2022. This turned out incredibly delicious and I cannot get enough of this!

I love the Fall seasonal vegetables that come out! I love all kinds of squash which is probably one of my all time favorites next to brussels sprouts. Hey no judging!

Making a butternut squash puree and leaving in the fridge for the entire week is a great way to prep for all your meals. Whether you use it in breakfast bowls such as this or as a mash with a delicious protein for lunch or dinner. It is quite versatile, healthy and yummy!

Equipment

  • 1 Mixing Bowl

Ingredients

  • 1 Light & Fit Caramel Apple Pie Nonfat Yogurt
  • 1 tsp Cinnamon
  • 2 cups Cubed Butternut Squash
  • 1/4 cup Ratio Keto Coconut Almond Granola
  • 1 tbsp Ocean Spray Reduced Sugar Dried Cranberries
  • 2 tbsp PBfit Peanut Butter Powder

Instructions

  • I prepped frozen cubed butternut squash earlier in the week. If you haven't, all you need to do is microwave or cook your squash then blend. I add Swerve Brown Sugar to mine for sweetness.
  • Add the yogurt, butternut squash puree and granola to your fancy bowl.
  • Drizzle your peanut butter and top with the dried cranberries.
  • I have added sugar free maple syrup drizzle to this bowl in the past too which sweetens it even more. SO GOOD!
