Thai Peanut Chicken Egg Roll Bowls

I am all about peanut chicken. If I go to a Thai restaurant (which is rare) I will always get peanut sauce on the side. This is because I have an obsession with Pad Thai so I have to get that but LOVE the peanut sauce for my rice. HA! Yep, definitely NOT healthy.
My husband isn't a huge fan of Thai food so it is rare that I eat it. Which is obviously for the best since I have no self control when I eat Thai! HA!
PBfit Peanut Butter Powder is what makes this lower in points as it doesn't have all the sugar. The recipes using PBfit are endless! Whether it is sweet or savory, peanut butter powder has become one of my best friends!

    1. Thanks Lori for pointing this out! I updated to add water for your desired consistency! I have also used almond milk instead of water for slightly creamier.
