Thai Peanut Chicken Egg Roll Bowls
Egg roll in a bowl is a popular low carb/keto dish that is SO delish! I turned it into a Thai peanut chicken version which you MUST try! Using PBfit powder peanut butter saves you TONS of calories and points. Trust me this is so good that you will want put this on repeat!


Thai Peanut Chicken Egg Roll Bowls
I am all about peanut chicken. If I go to a Thai restaurant (which is rare) I will always get peanut sauce on the side. This is because I have an obsession with Pad Thai so I have to get that but LOVE the peanut sauce for my rice. HA! Yep, definitely NOT healthy. My husband isn't a huge fan of Thai food so it is rare that I eat it. Which is obviously for the best since I have no self control when I eat Thai! HA!PBfit Peanut Butter Powder is what makes this lower in points as it doesn't have all the sugar. The recipes using PBfit are endless! Whether it is sweet or savory, peanut butter powder has become one of my best friends!
Equipment
- 1 Fry Pan
- 1 Sauce Pan
- 1 Large Mixing Bowl
Ingredients
- 20 oz Ground Chicken
- 12 cups Mixed Shredded Cabbage
- 2 tbsp Crushed Peanuts
- 1/2 cup Chopped Green Onions
Peanut Sauce
- 1/2 cup PBfit Peanut Butter Powder
- 4 tbsp Island Soyoki Teriyaki Sauce (Trader Joes)
- 2 tbsp Lite Soy Sauce
- 4 tsp Chili Sauce
- 1/8 cup water (use the amount you need for desired consistency)
Instructions
- Fry up your ground chicken. I seasoned with salt and pepper.
- On medium heat, warm up your sauce in the sauce pan until mixed.
- Once the chicken no longer has pink, weigh out your portions in each bowl.
- Measure out your cabbage and sauce into each of your bowls.
- Transfer each bowl one at a time into your large mixing bowl and mix together. Then dump back into your bowl and top with green onions and crushed peanuts.

This sauce is sooooo thick. Is it supposed to be?
