Honey Chipotle Meatball Bowls
These are such a delicious and easy lunch prep which is always what I like! The meatballs smothered in this sweet and extra spicy sauce are AMAZING!
These are made with 99% ground turkey but ground chicken or 96/4% beef would be great alternatives as well. Add in corn salsa and rice and you have yourself a filling and delish meal!
Honey Chipotle Meatball Bowls
These turned out so delicious! I made these with 99% ground turkey but they would be yummy made with ground chicken or 96/4% beef too! They have quite a kick to them but you can reduce the amount of adobo chipotle peppers and sauce if you need. OR you can add more brown sugar and/or honey for more sweetness.This was an incredibly quick and easy lunch prep which I will definitely be making on repeat!

- 1 Rice Cooker
- 1 Air Fryer
- 1 Sauce Pan
Ingredients
Meatballs
- 2 lbs 99% Ground Turkey
- 1/8 cup Diced Green Onions
- 2 tbsp Chopped Cilantro
- 1 Egg
- 1/2 cup Panko Breadcrumbs
- 3-1/2 tsp Adobo Sauce
- 1 tsp Ground Cumin
- 1 tsp Garlic Powder
Honey Chipotle Sauce
- 3 tbsp Sugar Free Honey
- 1 tbsp Canned Chipotle Peppers in Adobo Sauce
- 4 tsp Swerve Brown Sugar
- 1/2 tbsp Apple Cider Vinegar
- 1/2 cup Vegetable Stock
Corn Salsa
- 4 cups Canned Corn
- 1/2 cup Diced Red Onion
- 1/8 cup Chopped Cilantro
- 2-1/2 tbsp Diced Jalapeño
- 1 Juice of a Lime
Instructions
- Start cooking your rice in the rice cooker or pressure cooker
- Set your air fryer to 400
- Mix your meatball ingredients and make 28 small meatballs
- Place the meatballs into the air fryer in one layer. You will need to make two batches.
- Air fry for 8-10 minutes. Note that not all air fryers cook the same so check on your meatballs periodically after 8 minutes.
- Mix your corn salsa ingredients in a bowl then set aside.
- Heat up your sauce ingredients in a sauce pan and bring to a boil then turn down to med.
- When all the meatballs are cooked, dump gently into your sauce and mix.
- Your rice should be done at this point so add it to your lunch containers then add the corn and meatballs.
- Drizzle extra sauce over your meatballs, add a slice of lime and cilantro.
- These last all week in the fridge!
