Equipment

  • 1 Air Fryer
  • 1 Microwave
  • 1 Shallow Baking Dish for marinade
  • 1 Small Mixing Bowl

Ingredients
  

  • 6 oz Sockeye Salmon
  • 1/2 cup White Rice
  • 8 Brussel Sprouts

Honey Mustard Marinade

  • 1 tbsp Dijon Mustard
  • 1 tbsp Wholesome Yum Keto Honey Substitute
  • 1/2 tsp Olive Oil
  • 1 tsp Minced Garlic
  • 1 tsp Lemon Juice
  • Salt & Pepper
  • Lemon slices or wedges and parsley for garnish

Honey Mustard Dip

  • 1/2 tbsp 0% Greek Yogurt Plain
  • 1/2 tbsp Dijon Mustard
  • 1/2 tbsp Wholesome Yum Keto Honey Substitute
  • 1/2 tsp Lemon Juice

Instructions
 

  • Whisk marinade in a small bowl
  • Place salmon in a shallow baking dish, season with salt & pepper and brush the marinade over both sides. Let marinade for 15 to 30 minutes.
  • Set your air fryer to 400
  • Spray air fryer with olive oil spray and place salmon in skin down
  • Put your brussel sprouts into the dish with marinade that your salmon was in and toss.
  • Put your brussel sprouts in the air fryer with the salmon and cook for 8 minutes.
  • Whisk up your dip in a small bowl and set aside.
  • Cook your rice (I used microwaveable) while your salmon and sprouts are cooking.
  • When everything is cooked, assemble your bowl and top with parsley and add the dip and lemon slices on the side.
