Hot Honey Chicken and Rice Bowls

I love hot honey anything…sweet and spicy is my jam! This chicken is delish and best part is it’s low in Weight Watchers points, calories and time!

Quick and easy is what I prefer since believe it or not being in the kitchen isn’t exactly what I enjoy most in life. I cooked the chicken in the air fryer like I do most all of my food which only took roughly 15 to 20 minutes!

I used frozen in a bag brown rice so that was quick and super simple. My doctor told me that I need to start eating. more complex carbs so I am adding more brown rice than the white. I sacrificed health over my beauty in my photos. HA!

Hot Honey Chicken and Rice Bowls

I love anything sweet with a kick! This chicken has tons of flavor and super easy.
🔥 **Hot Honey Chicken**: Juicy chicken pieces glazed with a perfect blend of spicy and sweet hot honey sauce. 🌶️🍯
🍚 **Brown Rice**: Fluffy and wholesome, providing a great base and those essential complex carbs. 🌾
🥒 **Sweet Pickles**: A tangy, sweet crunch that complements every bite. 🥒
🥬 **Cabbage**: Crisp, fresh, and packed with vitamins. 🥬

Equipment

  • 1 Air Fryer
  • 1 Small Sauce Pan
  • 1 Medium Mixing Bowl
  • 4 Lunch Containers

Ingredients
  

  • 1 lb Chicken Breast
  • 2 tbsp Buffalo Wing Seasoning (I use Colonna)
  • 2 cups Brown Rice (use any kind of rice)
  • 2-2/3 cups Mixed Cabbage
  • 16 Sweet Pickles

Hot Honey Sauce

  • 1/2 cup Honey Substitute (I use Wholesome Yum)
  • 2 tbsp Hot Sauce (I use Frank's RedHot Buffalo Wing Sauce)
  • 1 tbsp Light Mayo
  • 2 gm Sugar Free Unflavored Jel (gelatin)
  • 2 tbsp Water

Instructions
 

  • Cut your chicken breast in bite size pieces.
  • Place your chicken in a bowl and season with buffalo wing seasoning, mixing to be sure all pieces are covered.
  • Air fry at 400 for 20 minutes, moving chicken pieces around a couple times throughout the cooking process.
  • While the chicken is cooking, cook your rice. I used Trader Joes bag organic rice that I just heat up in the microwave.
  • Whisk your sauce ingredients in a small sauce pan and bring to a boil then quickly simmer.
  • Once your chicken is done, mix it all with your sauce, covering all pieces.
  • Put the saucy chicken back into your air fryer for 5 minutes. Trust me…this is important.
  • Assemble your lunch containers!
