Canadian Bacon, Egg & Cheese Breakfast Sandwiches

I love to meal prep and have been doing it since returning to the office after COVID lockdown. Meal prepping is one of the best ways to stay on track! We all get busy with life so making sure that you are setting yourself up for success is super important!

Whether it is breakfast or lunch, meal prepping can be quick and easy. Just grab one of these breakfast sandwiches either out of the freezer or fridge and take to work.


Canadian Bacon, Egg & Cheese Breakfast Sandwiches

This is one of my most popular and my most favorite meal prep breakfast sandwich. These come in at only 4 points so how could you go wrong?

Equipment

  • 1 Fry Pan

Ingredients
  

  • 1 Egg
  • 1 Light English Muffin
  • 2 Canadian Bacon
  • 1 Velveeta Slice

Instructions
 

  • Fry up your egg in the fry pan.
  • While that cooks, slice your muffins.
  • Unwrap your cheese and divide up your canadian bacon.
  • I do not toast my muffins as I heat them up when I heat my sandwich. If you prefer them toasted, now is a good time to do that.
  • Lay out the bottom muffin pieces and assemble with your canadian bacon, egg, cheese then the top of your muffin.
  • I let cool then wrap up in foil. Some prefer sandwich bags or wrap in a paper towel before the foil. This is your choice.
