Pumpkin Chocolate Chip Mini Loaves
These mini loaves definitely aren’t mini when it comes to flavor! They are AMAZING and it tastes like you are eating a guilty baked sweet bread but these are guilt free!
The chocolate chips, especially inside these pumpkin loaves are warm, melty and gooey. I will have these not only for meal prep but also for dessert and snack!
Pumpkin Chocolate Chip Mini Loaves
I’m so excited to have these warm delicious mini pumpkin bread loaves for my breakfast this week at work! These taste like I’m having a naughty breakfast sweet bread but for one it’s ONLY 200 calories and 7 ww points! I’m definitely here for this goodness!Whether these are for a meal or a snack, they’re so yummy and filling that you’ll be happy and satisfied!
Equipment
- 1 Large Mixing Bowl
- 1 Mini Loaf Pan Tin
- 1 Oven
Ingredients
- 1 box Pillsbury Sugar Free Yellow Cake Mix
- 1 can Pure Pumpkin (I use Libbys)
- 1 Egg
- 70 grams Lilys Sugar Free Chocolate Baking Chips
- 1 tsp Ground Cinnamon
- 2 tsp Pumpkin Spice
- 1 tsp Ground Nutmeg
- 3 tsp Vanilla Extract
Instructions
- Preheat oven to 335 degrees
- Mix all your ingredients except for chocolate chips in your bowl
- Gently fold in your chocolate chips leaving some as a topper on each loaf
- Spray your loaf tin and pour evenly into 8 of your cups
- Top with remainder of chocolate chips
- Bake for 25 minutes (timing may differ based on your oven)
- If a toothpick is clean after poking your loaf then they are done!
- Set on a cooling rack until they are cooled
- Store in an air tight container in the fridge
- Warm up for 40 seconds just before eating if you want it warm
