Mini Chocolate Chip Banana Loaves

Mini Chocolate Chip Banana Loaves
HOLY BANANAS these are delicious and only 4 points per bread loaf! You don’t have to give up yummy food my friends!If you have bananas that are getting darker by the day then make these quick! My bananas almost got thrown out by my husband but I was able to keep a few promising that I would make something with them. These are super easy and super delish!
Equipment
- 1 Oven
- 1 Large Mixing Bowl
Ingredients
- 1-3/4 cup Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 3 Bananas
- 2 large Eggs
- 1/3 cup Unsweetened No Sugar Applesauce
- 1/2 cup Sugar Free Maple Syrup
- 1/4 cup Unsweetened Vanilla Almond Milk
- 1/2 tsp Himalayan Pink Salt
- 1/2 tsp Ground Cinnamon
- 2 oz Lilys Dark Chocolate Baking Chips
Instructions
- Preheat over to 350
- In your mixing bowl, mash bananas and add everything EXCEPT your flour and chocolate chips. MIX
- Mix in your flour and chocolate chips but don't over mix
- Divide your batter into the mini loaf pan for 8 loaves. If making muffins, fill a 12 cup muffin tin
- Bake for 25 minutes. Depending on your oven, you may need 5 more minutes. Check with a toothpick and if it comes out clean after poking then you're good
- Let sit to cool down on a wire rack then refrigerate for up to a week!
