Cheesy Cajun Chicken Pasta Bowls

WOWZERS if you enjoy a cajun kick and melted cheesy pasta then THIS is for you!

I am in love with Al Dente pasta with how delicious and Weight Watchers friendly it is. I’ve not been a huge pasta fan my entire life but I have turned out to be obsessed with making different pasta dishes.

This recipe I had made for dinner one night and this time turned it into a meal prep and tweaked it slightly. The best part of this recipe is how easy it is. The sauce mixes in a blender then stirred in with the cooked pasta. Topped with air fried blackened chicken and you have yourself a delicious meal!


Cheesy Cajun Chicken Pasta Bowls

There is something so comforting about this meal! I love a good spicy chicken with a cheesy creamy pasta. Making this with rice is amazing too!

Equipment

  • 1 Air Fryer
  • 1 Sauce/Pasta Pan
  • 1 Blender/Ninja

Ingredients
  

  • 24 oz Tyson Blackened Chicken
  • 3 cups Al Dente Fusilli Pasta (Dry)
  • 3 Mini Red Sweet Peppers – diced
  • 1 Sweet Onion medium – chopped

Creamy Cheesy Cajun Pasta Sauce

  • 2-1/2 oz Lite Mozzarella Shredded Cheese (Trader Joes)
  • 2 oz Lite 3 Cheese Blend Shredded (Trader Joes)
  • 4 Laughing Cow Light Cheese Wedges
  • 2 tbsp Reduced Fat Cream Cheese
  • 1/2 oz Fresh Parmesan Cheese
  • 1 cup Fat Free Vegetable Stock
  • 2/3 cup Unsweetened Almond Milk
  • 1-1/2 tbsp Onion Powder
  • 1-1/2 tbsp Garlic Powder
  • 1 tsp Papas Pepper Extreme Seasoning (use any cajun seasoning)
  • 2 tsp Dak's Original Red Seasoning
  • 1 dash Black Pepper

Instructions
 

  • Boil Pasta
  • Air Fry your chicken at 400 for 11 minutes
  • Chop/Dice up your red peppers and onion
  • Blend all your sauce ingredients – leaving some fresh parmesan aside for topping
  • Once pasta is cooked, drain and put back into your pan
  • Dump your red peppers, onion and pour cheese sauce into your pasta and mix
  • Cut up your chicken in bite size pieces
  • Divide up your pasta into 4 glass containers
  • Top each of your containers with chicken, parmesan and parsley
