Cheesy Bacon and Veggie Egg Muffins

These baked egg muffins are in incredible! Not only are they delicious but they’re low in points, calories and super easy!

Cheesy Bacon and Veggie Egg Muffins

These baked egg muffins are so easy and make the perfect meal prep breakfast for the week!
You could never get tired of these with the many ingredients you can make these with.

Equipment

  • 1 Oven
  • 1 Muffin Tin

Ingredients
  

  • 1 Egg
  • 2 tbsp Spinach
  • 2 grams Mini Sweet Peppers
  • 1 tbsp Bacon Pieces (I use Kirkland)

Instructions
 

  • Preheat oven to 350
  • Chop up your veggies
  • Whisk your eggs (1 per muffin)
  • Layer your muffin tin with veggies and bacon per measurements
  • Pour whisked eggs evenly into each tin. Season is optional
  • Bake at 350 for 17 minutes. Time may be slightly different per oven.
  • When cooked, take out and put each cup on a wire rack to cool.
