This easy high-protein meal prep recipe is packed with sweet and savory flavor, reheats beautifully, and makes four delicious lunches or dinners for the week.

Why This Chicken Meal Prep Doesn’t Taste Like Meal Prep
Let’s be honest—one of the biggest reasons people struggle with meal prep is because eating the same bland chicken and rice every day gets old fast. That’s exactly why I love creating recipes like these Bourbon Blackberry Chicken Bowls. The sticky blackberry glaze adds layers of sweet, savory, and slightly smoky flavor, while the fresh blackberry salsa keeps every bite bright and refreshing. Instead of feeling like you’re eating leftovers, this meal feels like something you’d order at a restaurant. The combination of juicy air fryer chicken thighs, fluffy jasmine rice, and fresh fruit-forward toppings creates a meal prep you’ll actually look forward to all week long.

The Secret to Meal Prep Bowls That Look as Good as They Taste
When it comes to creating meal prep recipes that stand out, color matters just as much as flavor. These chicken and rice bowls are packed with vibrant ingredients that make them visually irresistible. The glossy deep-purple bourbon blackberry glaze, bright red bell peppers, fresh cucumber, and juicy blackberries create a stunning contrast against the fluffy jasmine rice. If you’re someone who shares your meals on Instagram or simply enjoys food that looks exciting, this recipe delivers. A colorful meal isn’t just more appealing to eat—it’s also a great way to incorporate a variety of fresh ingredients into your weekly meal prep routine. The result is a healthy chicken meal prep that tastes incredible and looks worthy of a spot in your feed.

Frequently Asked Questions
Can I use chicken breast instead of chicken thighs?
Absolutely. Chicken breast works well in this recipe and is a great lean protein option. Just be careful not to overcook it in the air fryer.
Does the alcohol cook out of the bourbon?
Most of the alcohol cooks off while the sauce simmers, leaving behind the rich flavor that bourbon adds to the glaze.
Can I make this recipe without bourbon?
Yes. You can substitute apple juice or chicken broth, though the flavor profile will be slightly different.
Can I freeze these meal prep bowls?
The chicken and rice freeze well. For best results, make the blackberry salsa fresh when you’re ready to eat.
