Equipment

  • 1 Air Fryer
  • 1 Rice Cooker
  • 1 Small Sauce Pan
  • 4 Lunch Meal Prep Containers

Ingredients
  

  • 1.5 lbs Chicken Thighs
  • Salt & Pepper to Taste
  • 1 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 2 cups Rice

Honey Orange Habanero Sauce

  • 1/4 cup Honey (I use Wholesome Yum Keto)
  • 1/4 cup GHughes Sweet Chili Sauce
  • 1/4 cup Orange Juice
  • Orange Zest from 1/2 orange
  • 1 tsp Habanero Sauce (more if you like the heat!)
  • 1 tbsp Soy Sauce – low sodium
  • 1 tbsp Rice Vinegar
  • 1 tsp Cornstarch (optional)

Pineapple Cucumber Salad

  • 3 mini Cucumbers – chopped
  • 2 cups Pineapple
  • Juice of 1 lime
  • 2 tbsp Cilantro
  • Pinch of salt

Instructions
 

  • Air Fry Seasoned Chicken at 400 for 25 minutes. Flipping half way through and cooked to 165. Be sure to cook in a single layer
  • Cook your rice. Whether it is in a rice cooker, pressure cooker or microwave.
  • Chop up your veggies and fruit, mix well and set aside.
  • When your chicken is close to being done, whisk your sauce ingredients. If you are using cornstarch, mix it with a little water first. You will thank me later!
