Peanut Butter Chocolate Chip Banana Baked Oatmeal
This combination for anything is perfect! I have never made baked oatmeal and have been eyeing all the posts and recipes for a few years now. Not sure why I waited so long because YUM!
I had a few VERY brown bananas on the kitchen counter that I have been contemplating on what to make with them. With a busy short work week ahead, thought I would meal prep my breakfasts!




Peanut Butter Chocolate Chip Banana Baked Oatmeal
I have seen a ton of baked oatmeal posts out there but yet have never tried my hand at making them. I figured that this week it would be easier for me to meal prep my breakfasts in addition to my lunches. The title is a mouthful and so is the portions! These turned out DELISH, especially with the addition of peanut butter powder both inside and as the drizzle. Then you have the melted chocolate in each bite along with the sweetness of the banana and maple syrup. I am in heaven!
Equipment
- 1 9×13 sprayed glass baking dish
- 1 Mixing Bowl
Ingredients
- 3 cups Old Fashioned Oats
- 1/4 cup PBfit Peanut Butter Powder
- 1/3 cup Sugar Free Maple Syrup
- 2 Eggs
- 1 tsp Baking Powder
- 2 cups Unsweetened Vanilla Almond Milk
- 3 Medium Bananas (brown)
- 2 oz Sugar Free Chocolate Chips
- 1 tsp Vanilla Extract
- 1 tsp Ground Cinnamon
- 1/3 tsp Ground Nutmeg
Instructions
- Preheat oven to 350
- Mashed your bananas in a large bowl
- Mix in the wet ingredients until combined
- Add in your dry ingredients and mix
- Pour mixture into your sprayed glass dish
- Bake for 35 minutes or 5-8 minutes longer for drier more solid oatmeal

Could we use regular peanut butter instead of PB Powder?
Yes, you can! It will add points/calories but still will be delicious!
