Why I Love Using My Air Fryer

My air fryer is one of my most-used kitchen appliances! I especially love it for chicken because it cooks quickly, keeps the chicken juicy, and gives it a delicious caramelized exterior with very little oil.

It’s also great for vegetables, potatoes, salmon, and reheating leftovers, making it one of my favorite tools for easy meal prep.

Meal Prep Tips

These bowls are perfect for preparing ahead of time. Store them in airtight containers in the refrigerator for up to 4 days.

For the best texture, you can keep the pineapple salsa separate and add it after reheating the chicken and rice.

I also recommend slicing the chicken after cooking rather than before. This helps keep the chicken juicy and makes for a much prettier meal prep bowl!

These Huli Huli Chicken & Rice Meal Prep Bowls are a delicious taste of the islands in an easy meal-prep-friendly bowl! Juicy air fryer chicken is coated in a sweet and savory Huli Huli sauce, then served over fluffy jasmine rice and topped with fresh pineapple salsa.
They're packed with protein, full of flavor, and incredibly easy to make. The combination of caramelized chicken and bright, fresh pineapple salsa makes this one meal prep you won't get tired of!

Equipment

  • 1 Air Fryer
  • 1 Microwave or Rice Cooker
  • 2 Mixing bowls
  • 2 Cutting Boards
  • 1 Strainer
  • 4 Meal Prep Containers
  • 4 Condiment Containers

Ingredients
  

  • 1-1/2 lbs Chicken Breast
  • 2 cups Jasmine Rice

Huli Huli Marinade

  • 1/2 cup Unsweetened Pineapple Juice
  • 1/4 cup Low Sodium Soy Sauce
  • 3 tbsp Brown Sugar Substitute (Swerve)
  • 2 tbsp Sugar Free Ketchup
  • 1 tbsp Minced Garlic
  • 1 tsp Minced Ginger
  • 1 tsp Sesame Oil
  • 1 tbsp Rice Wine Vinegar

Huli Huli Sauce

  • 3/4 cup Unsweetened Pineapple Juice
  • 1/4 cup Low Sodium Soy Sauce
  • 3 tbsp Sugar Free Ketchup
  • 1 tbsp Rice Wine Vinegar
  • 1 tsp Minced Garlic
  • 1/2 tsp Minced Ginger
  • 1/2 tsp Sesame Oil

Creamy Hawaiian Sauce

  • 1/2 cup Nonfat Plain Greek Yogurt
  • 3 tbsp Reserved Huli Huli Sauce
  • 1 tsp Lime Juice
  • 1 tbsp Unsweetened Pineapple Juice

Pineapple Salsa

  • 1 cup Diced Pineapple
  • 1/2 cup Diced Red Onion
  • 1/8 cup Finely Diced Sweet Mini Red Pepper
  • 1/4 cup Chopped Cilantro
  • 1/4 cup Chopped Green Onion
  • Juice of 1 Lime
  • Pinch of Salt

Instructions
 

  • Pat dry your chicken breasts
  • Whisk your marinade ingredients.
  • Put your chicken in either a large ziplock bag or a container, pour marinade over, seal and refrigerate for 30 minutes to overnight. (depends on your time)
  • Air fry your chicken at 400 for 25 minutes, flipping multiple times throughout the cooking process. Brushing some of the marinade at the last 5 minutes.
  • Start cooking your rice.
  • While your chicken is cooking, whisk together your Huli Huli sauce and set aside. If you want a thicker sauce, you can add cornstarch/water combo and bring to a boil. I did not want the extra calories and didn't feel that it needed it.
  • Make your pineapple salsa and set aside.
  • When your chicken breasts are cooked to 165 degrees, take them out and set onto a cutting board to cool down.
  • Make your creamy Hawaiian sauce and put into your condiment containers evenly. I topped mine with lime zest.
  • Assemble your bowls with the rice on half and pineapple slaw on other half.
  • Once your chicken is cooled down, slice or cut into bite size pieces (I do that after I have taken my photos). Rub more of the sauce and then add to your bowls.
  • Add your creamy hawaiian sauce and ENJOY!
