Sweet Chili Peanut Chicken Meal Prep Bowls
Equipment
- 1 Air Fryer
- 1 Rice Cooker
- 1 Small Sauce Pan
- 1 Medium Mixing Bowl
- 4 Meal Prep Containers
Ingredients
- 4 large Chicken Breasts
- 1 tbsp Paprika
- 1 tbsp Garlic Powder
- 1 tbsp Onion Powder
- Avocado Spray
- 2 cups White Rice
- 2 cups Cucumber
- 1/4 Red Onion
- 2 cups Pineapple
Sweet Chili Peanut Sauce
- 1/2 cup Sweet Chili Sauce (I use GHughes SF)
- 1/4 cup PB2 (peanut butter powder)
- 2 tbsp Soy Sauce (low sodium)
- 1 tbsp Rice Vinegar
- 1 tsp Sesame Oil
- 2 tsp Honey (I use Keto Honey)
- 1 tsp Minced Garlic
- 1 tsp Minced Ginger
- 4 tbsp Warm Water
Instructions
- Pat dry your chicken breasts then cut slits in the top.
- Season both sides and spray with either avocado or EVOO spray.
- Cook your chicken at 400 for 25 minutes, flipping half way.
- Cook your rice.
- Dice up your cucumber and red onion then mix in a bowl and set aside.
- Drain your pineapple (I use tidbits) and set aside.
- When your chicken is almost done, whisk your sauce ingredients together and set aside.
- When your chicken is done and at 165 degrees, take it out and let it rest while you assemble your bowls.
- When your chicken is cooled down, slice and place on top of your rice and veggies.
- Drizzle your sauce evenly over each of your chicken. ENJOY!
- I take out the cucumber prior to reheating and then mix it in later. I love the cool crunch it adds!
