Air Fryer Maple Soy Glazed Chicken Thighs
Sweet, savory and meal prepped! These juicy, maple-glazed chicken thighs come together in the air fryer for an easy and delicious meal that'll make your weekly lunches so satisfying! Pair them with jasmine rice, shredded cabbage, and caramelized pineapple for a balanced and flavorful dish!
Equipment
- 1 Air Fryer
- 1 Small Sauce Pan
- 1 Large Mixing Bowl
- 1 Medium Mixing Bowl
- 4 Lunch Containers
Ingredients
- 1 lb Boneless skinless chicken thighs
- 2 cups Jasmine Rice
- 2 cups Shredded Cabbage
- 2 cups Pineapple Tidbits
Maple Soy Glaze
- 1/2 cup Sugar Free Maple Syrup
- 4 tbsp Low Sodium Soy Sauce
- 2 tbsp Dijon Mustard
- 2 tsp Garlic, minced
- 2 tsp Ginger, minced
- Salt & Pepper
Instructions
- Whisk your maple syrup, Dijon, garlic and ginger.
- Cut your chicken into pieces (can leave whole too) and season with salt & pepper.
- Mix your chicken with half of your marinade and marinate for at least 20 minutes. Can be up to 2 hours.
- Once your chicken is marinated, air fry at 400 for 20 minutes; flipping multiple times during the cooking process. You will need to do this in two batches.
- Cook your rice if you are using a rice cooker. I used Trader Joes microwaveable jasmin rice.
- Once your chicken is cooked, add it all to a bowl and set aside.
- Put your pineapple into the air fryer to caramelize. This is optional but I love the taste.
- Pour your other half of the marinade in a sauce pan and simmer until it thickens slightly.
- Once sauce is thickened, pour over your chicken and mix to coat.
- Mix your cabbage and pineapple.
- Assemble your bowls and enjoy!
