Big Pig Breakfast Sandwich

Meal prepping is so important to be successful in your weight loss journey. Especially when you are working in an office environment.
When you don’t have a lot of time in the mornings, between getting ready and your commute, these can be ideal! I do enjoy making different breakfasts each morning but it gets to be stressful sometimes and who needs stress?!
These are delicious and I am all about adding as much meat as possible!



Big Pig Breakfast Sandwich
I love a delicious and big breakfast! When it is meal prepped, it's even better. These breakfast sandwiches are perfect for filling you up each morning at work.
Equipment
- 1 Sprayed Donut Tin
- 1 Oven
- 1 Medium Mixing Bowl
Ingredients
- 4 Thomas Light English Muffins
- 4 tbsp Bacon Pieces/Bits (I love Kirkland brand)
- 5 slices Deli Smoked Ham
- 4 slices Velveeta
- 4 Eggs
Instructions
- Preheat your oven to 375
- Whisk eggs and bacon pieces
- Spray your donut tin and pour egg mixture into 4 evenly
- Bake for 10 minutes
- While egg is baking, divide up your ham slices, unwrap cheese slices and slice english muffins
- Pile your ham evenly on each bottom piece of english muffins
- Once your egg donuts are done, place on top of each ham piles
- Add cheese slices then top of the english muffin
- Wrap in foil and refrigerate!
- When you are ready to reheat, unwrap foil and wrap sandwich in paper towel. Heat for 1 minute
