Chicken Parmesan Stuffed Sweet Potato

I made this as part of my four various stuffed potato meal prep! This was one of my two favorites! The flavors are so delish and the sweet potato mixed in was AMAZING!

Stuffed russet and sweet potatoes are such a great meal prep idea! You can stuff them with so many different foods!


Chicken Parmesan Stuffed Sweet Potato

I made this as part of my meal prep for the week and this was one of my favorites!
The flavors in this were so amazing and combining it with the sweet potato was a huge hit!

Equipment

  • 1 Air Fryer
  • 1 Fry Pan

Ingredients
  

  • 1 large Sweet Potato
  • 5 oz Chicken Breast
  • 1/2 cup Marinara
  • 1/3 cup Diced Onion
  • 1/4 cup Grape Tomatoes
  • 1 tbsp Grated Parmesan
  • 1 oz Lite Mozzarella Shredded Cheese
  • 1/2 tsp Italian Seasoning
  • 2 tbsp Chopped Fresh Basil

Instructions
 

  • Set air fryer at 400 for 45 minutes
  • Wash your sweet potato, rub with EVOO, stab several times with a fork and salt all around.
  • Stick your tater in the air fryer for 45 minutes, turning half way. (time may vary depending on your air fryer)
  • While your potato is cooking, cut your chicken breast into bit size pieces.
  • When your potato has 15 minutes left, add your chicken. (season with salt & pepper if you wish)
  • In your fry pan, add diced onion and let that cook for 5 minutes. Then add the tomatoes. Keep cooking for 5 more minutes.
  • Add the marinara to your fry pan along with Italian seasonings and basil.
  • Once your chicken is cooked, add to your fry pan along with your cheeses and mix all together.
  • Set your cooked sweet potato on a plate or your meal prep container, slice open and fluff the potato insides.
  • Add your chicken parm to the potato and top with more parmesan and basil!
