Air Fryer Peach Balsamic Salmon with Fresh Peach Salsa
Equipment
- 1 Air Fryer
- 1 Rice/Pressure Cooker
- 2 Small Mixing Bowl
- 1 Small Sauce Pan
Ingredients
- 1 6oz Salmon Filet
- 1/8 tsp Garlic Powder
- 1/8 tsp Paprika
- 1/2 cup Rice (any kind you wish but white or jasmine is referred)
Peach Balsamic Glaze
- 1-1/2 tsp Peach Sugar Free Keto Gelatin Powder (Simply Delish)
- 1 tbsp Black Currant Balsamic Vinegar (can use plain too)
- 1-1/2 tsp Keto Honey (I use Wholesome Yum) you can use sugar free maple syrup too
- 1/2 tsp Dijon Mustard (trust me it works!)
- 1/4 tsp Soy Sauce or Coconut Aminos
- 1/4 tsp Corn Starch
- 1 tbsp Water
Fresh Peach Salsa
- 1 medium Peach (cut in small pieces)
- 2 tbsp Finely Diced Red Onion
- 1 tbsp Finely Diced Jalapeno
- 1 mini Sweet Red Pepper (finely diced)
- 1/2 tbsp LimeJuice
- 1 tbsp Cilantro or Basil
- 1 pinch Salt
Instructions
- Start cooking your rice!
- In your small saucepan, whisk together all glaze ingredients.
- Simmer over medium heat, stirring until thickened. (about 2 minutes)
- Remove from heat and set aside.
- Set your air fryer to 400
- Pat your salmon dry.
- Season with paprika and garlic powder.
- Brush some of your glaze on top in a thin layer and set aside remaining glaze.
- Stick your salmon in the air fryer for 12 minutes (depending on air fryer)
- Brush your salmon with more glaze half way through, and then again when you have 1-2 minutes left.
- While your salmon is cooking, make your salsa!
- Mix your peach, red onion, jalapeno, lime juice and cilantro in a bowl and let it sit while your salmon cooks. Optional to add a little salt too!
- In your serving bowl, lay your rice on the bottom then your salmon and then your salsa!
- Drizzle the top with a little extra honey and ENJOY!
