These ingredients work together to create a perfect balance of sweet, salty, tangy, and umami notes.

Ingredients

  • Chicken thighs or breasts (your choice)
  • Keto honey
  • Lite soy sauce
  • Fresh garlic, minced
  • Fresh ginger, grated
  • Seasoned rice vinegar
  • Sesame oil

How To Make It

  1. Mix the marinade: Combine keto honey (I use Wholesome Yum), lite soy sauce, garlic, ginger, seasoned rice vinegar, and sesame oil in a bowl.
  2. Marinate the chicken: Toss the chicken pieces in the marinade and let it sit for at least 30 minutes. This step infuses the meat with flavor and helps tenderize it.
  3. Air fry magic: Place the marinated chicken in your air fryer basket and cook at 375°F (190°C) for about 18-20 minutes, flipping halfway through. The air fryer crisps up the outside while keeping the inside juicy and tender. I use the InstantPot 10QT Air Fryer!
  4. Glaze it up: If you want extra sticky goodness, baste the chicken with leftover marinade in the last few minutes of cooking.

Equipment

  • 1 Air Fryer
  • 1 Pressure/Rice Cooker
  • 2 Large Mixing Bowls
  • 1 Small Mixing Bowl
  • 1 Small Saucepan
  • 4 Glass Meal Prep Containers

Ingredients
  

  • 1-1/2 lbs Chicken Thighs
  • 6 tbsp Lite Soy Sauce
  • 4 tbsp Wholesome Yum Keto Honey Substitute
  • 2 tbsp Seasoned Rice Vinegar
  • 1 tsp Toasted Sesame Oil
  • 2 tsp Minced Garlic
  • 1 tsp Squeeze Ginger
  • 1 tsp Cornstarch
  • 2 cups Jasmine Rice
  • 4 cups Broccoli Slaw

Instructions
 

  • Cut up your chicken into bite size pieces and place in a mixing bowl
  • Take your sauce ingredients and whisk in a small bowl; use half to pour over your chicken and the other half pour into your saucepan.
  • Marinade your chicken in the fridge for at least 30 minutes.
  • Once your chicken is marinated, put in the air fryer at 400 for 20 minutes; flipping half way through.
  • While your chicken cooks, cook your rice.
  • Bring your sauce to a quick boil and whisk in the cornstarch (mix with water first, it helps!) and keep whisking – it will thicken up. Turn down to low-medium.
  • When your chicken is done, put into a clean bowl then pour over the sauce and mix to cover all pieces.
  • Start assembling your bowls! Starting with your broccoli slaw, then your rice and your chicken.
  • Top with sesame seeds, green onions, parsley, drizzle of honey and/or anything else you wish! ENJOY!
