Blackened Chicken Burrito Stuffed Squash

Delicata Squash is my ALL TIME favorite squash. It is so delicious and SO many ways to make it. Best part is that you can even eat the skin!
Delicata Squash is a winter squash that can be stuffed, baked, steamed, air fried, oven roasted, microwaved and sauteed! It can be stuffed and made into bowls such as this one or even made into fries which I eat a lot.




Blackened Chicken Burrito Stuffed Squash
Delicata Squash comes out in the Fall season but considered a winter squash. I love to air fry these and make into stuffed boats. The sweetness in the squash and the spice of the blackened chicken is such an amazing combo! Trust me with this one friends, this is delish!
Equipment
- 1 Air Fryer
- 1 Fry Pan
Ingredients
- 1 Delicata Squash
- 7 oz Tyson Blackened Chicken
- 4 tbsp Light Sour Cream
- 1/2 oz Cotija Cheese
- 1 Wholly Guacamole Container
- 2 Diced Sweet Mini Red Pepper
- 1/2 cup Diced Yellow Onion
- 1 cup Roasted Corn
- 2 tbsp Fresh Cilantro
Instructions
- Cut the delicata squash in half long ways and spoon out the seeds
- Drizzle EVOO and rub inside then season with taco seasoning
- Place in air fryer upside down for 25 minutes; flipping half way
- When your air fryer has 10 minutes left, add your chicken
- While that all cooks, caramelize your chopped onions in a small fry pan. I fry them on a high heat, once start to brown add a little bit of water, stir and repeat that process until it is all golden brown.
- Add your roasted corn in with your onions when they are almost done
- Once the chicken is done, cut up into bite size pieces
- Pull your squash out of the air fryer and set on your plate
- Stuff your squash with the onions/corn mix and chicken
- Top with cilantro, sweet red peppers, cotija cheese, sour cream and guac
