Honey Mustard Chicken Salad
I love big salads as you know and now that it is summer time I am ready to really dive in and make all sorts of delicious fresh and crisp ones!This was a huge success because of the honey mustard dressing I made that is ONLY 2 points! It is my favorite dressing and it's hard to find a good lower point store-bought one. I am forever changed!
Equipment
- 1 Air Fryer
Ingredients
- 4 oz Tyson Rotisserie Chicken Breast (use any chicken breast)
- 1 med Apple (I use Honeycrisp)
- 1/8 cup Sliced Almonds
- 2 oz Fat Free Crumbled Feta
- 1-1/8 oz Reduced Sugar Dried Cranberries
- 2 tbsp Diced Red Onion
- 3 cups Chopped Romaine Lettuce
Light Honey Mustard Dressing (serves 4)
- 1/2 cup Fage 0% Plain Greek Yogurt
- 5 tbsp Dijon Mustard
- 5 tbsp Wholesum Yum Keto Honey Substitute
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Lemon Juice
- 1 tbsp EVOO
- 1/2 tsp Black Pepper
Instructions
- Whisk your honey mustard ingredients together then place in fridge
- Air fry chicken at 400 for 10 minutes
- Cut up your apple into bite size pieces
- Dice your red onion
- Weigh out all ingredients and set aside
- Once your chicken is cooked, cut into bite size pieces
- Add your lettuce to a big bowl and then everything else
- Drizzle on your salad dressing or use a little bowl to dip and ENJOY!

How much Dijon mustard goes into the dressing? It’s not listed as an ingredient, but it appears in the picture.
Thanks so much for catching that Katie! So sorry about that. It is the same amount as the honey, 5 tbsp. I have just updated it. Of course, you can use less or more, depending on your liking.
