Cajun Chicken Stuffed Sweet Potato

This is one of my favorite combos…blackened chicken, chicken sausage and corn! So I decided to turn it into a stuffed sweet potato!

I made four different stuffed potatoes for my meal prep last week, two out of russet potatoes and two sweet potatoes. This one I added my lightened yum yum sauce which was perfect on this!


Cajun Chicken Stuffed Sweet Potato

Stuffed potatoes are such an easy and fun way to make a meal out of. The different recipes are endless and SO GOOD!

Equipment

  • 1 Air Fryer
  • 1 Microwave

Ingredients
  

  • 1 large Sweet Potato
  • 3 oz Tyson Blackened Chicken
  • 1 Sliced AmyLu Chicken Sausage (64gm link)
  • 1/2 cup Roasted Corn (I use either Trader Joes or Del Monte)
  • 1/2 tsp Papas Peppers Extreme Season (any cajun type – optional)

Yum Yum Sauce

  • 1/4 cup Fage 0% Plain Greek Yogurt
  • 1/2 tsp Sugar Free Ketchup
  • 1/8 tsp Paprika
  • 1/8 tsp Cayenne Pepper (ground)
  • 1/4 tsp Swerve Granulated Sugar Substitute
  • 1/4 tbsp Rice Wine Vinegar
  • 1/4 tbsp Unsweetened Vanilla Almond Milk
  • 1/2 tsp EVOO

Instructions
 

  • Wash your sweet potato, rub with EVOO, stab several times with a fork and salt all around.
  • Air Fry at 400 for 45 minutes, turning half way. (time may be different depending on your air fryer)
  • While your potato is cooking, thaw your corn in the microwave if using frozen corn.
  • Mix up your yum yum sauce and set aside.
  • When your potato has 8 minutes left, add your chicken then at 5 minutes left, add your chicken sausage (make sure you have sliced into bite size pieces).
  • Once everything is done, slice your potato open, fluff and season with Papas Peppers Extreme.
  • Stuff with all the goodies and either top with your yum yum sauce or set to the side and dip as you wish!
