Cheesy Bacon & Hashbrown Omelette

Omelette’s are one of those meals that can be made in so many variations! This is one of my all time favorites. Granted, I am a HUGE fan of hashbrowns and bacon so this combination for me is a big winner!


Cheesy Bacon & Hashbrown Omelette

This omelette is for anyone who is hungry like me! It is also perfect for sharing if you wish but I prefer to devour this.
There are so many ways to stuff an omelette that I could never get tired of them. This one is in my top 3 that I make. I am a huge crispy hashbrown fan though! Heck you could give me a big plate of hashbrowns and I would be happy!

Cook Time 20 minutes
Servings 1

Equipment

  • 2 Fry Pan
  • 1 Microwave

Ingredients
  

  • 1 cup Hashbrowns (I use Ore Ida)
  • 1/3 cup Lite 3 Cheese Blend Shredded
  • 2 tbsp Bacon Pieces/Bits (I love Kirkland brand)
  • 3 Eggs

Instructions
 

  • Fry up your hashbrowns in a non-stick fry pan to get them crispy
  • Whisk eggs then pour into the 2nd non-stick fry pan on med heat
  • Warm up your bacon in the microwave (optional)
  • Make sure to use a spatula to loosen your egg around the edge of the pan so it doesn't stick
  • Once your egg is only slightly runny in the middle, add your hashbrowns, bacon then shredded cheese
  • Fold over your omelette and if you want to, add more cheese on top
  • Transfer to your plate and BAM!
