Cheesy Taco Pasta Bowls

I love tacos and usually is what I order when we go out to eat. There are a ton of different proteins you can order; fish, chicken, pork, beef and more. Why not get crazy and turn them into a pasta?

I love this pasta made by Al Dente. It’s lower carb, calories and WW points but you would never know that when you eat it! It’s my favorite pasta which if you know me you know that I have never been a big pasta fan. I am beginning to become one as I make a ton of different flavored recipes.


Cheesy Taco Pasta Bowls

Let’s TACO ‘bout how amazing and delicious this lunch meal prep look! I’m so excited about my lunches this week.
These are super easy and don’t take all day to make. 👍🏼

Equipment

  • 1 Fry Pan
  • 1 Pasta Pot
  • 1 Collander
  • 1 Blender
  • 4 Lunch Containers

Ingredients
  

  • 8 oz AL Dente Carba-Nada Fusilli Pasta (dry)
  • 1-1/2 lbs 96/4% Ground Beef
  • 1-1/2 tbsp Daks Taco Knight Seasoning
  • 2 tsp Cumin
  • 1 medium Onion (diced)
  • 3 Mini Sweet Red Peppers (diced)
  • 1/2 cup Mild Diced Tomatoes and Green Chilies (in a can)
  • 6 tbsp Diced Fire Roasted Green Chilies (in a can)
  • 2 cups Fire Roasted Corn
  • 1 cup Black Beans
  • 2 tbsp Fresh Cilantro
  • 8 tbsp Light Sour Cream

Pasta Cheese Sauce

  • 3/8 cup Tostitos Medium Salsa Con Queso
  • 2/3 cup 2% Low Fat Cottage Cheese
  • 2 slices Velveeta Cheese
  • 1/2 tbsp Daks Taco Knight Seasoning

Instructions
 

  • Spray a large fry pan with non-stick and add diced onions, cook until turn slight brown
  • Boil your water and let your pasta cook
  • Add your ground beef, taco seasoning and cumin to your fry pan with the onions
  • Once your ground beef is almost cooked, add your diced tomatoes and green chilies then let simmer
  • While your meat and pasta are cooking, add your cheese sauce ingredients to a blender and blend until smooth
  • Drain your corn and set aside
  • Drain your black beans and rinse well with cold water then set aside
  • Once your pasta is cooked, drain leaving some liquid in your pan and add your pasta back into your pot
  • Pour in your cheese sauce and sweet red peppers then mix well
  • Assemble your bowls. Feel free to just mix everything together and divide evenly into your bowls. I did mine more for the pics to show the food separately.
