Copycat Panera Strawberry Poppyseed Salad

There is no reason to go out to eat at Panera and spend your money when you can make it at home yourself and it is just as delicious. Besides…I make mine bigger so really it is a win win!

This is the perfect summer salad with amazingly vibrant colors. They do say that the more colors you eat, the more healthy they are. Is this true? I will say yes because look at these beauties!!


Copycat Panera Strawberry Poppyseed Salad

I make this salad quite a bit in the summer time. It is just such a delicious, crisp and refreshing salad on a warm day. The summer is a great season for fresh fruit and fruit is such a great addition to a salad.
The dressing is store bought and from Panera. It is super low in points and calories! For 4 tbsp it is only ONE point!

Equipment

  • 1 Air Fryer
  • 4 Glass Storage Containers
  • 4 Condiment Containers

Ingredients
  

  • 6 cups Chopped Romaine Lettuce
  • 24 oz Chicken Breast
  • 2 cups Pineapple
  • 2 cups Blueberries
  • 2 cups Strawberries
  • 2 cups Mandarin Oranges
  • 1/4 cup Sliced Almonds
  • 1/2 cup Fat Free Feta Cheese Crumbles
  • 1/4 cup Panera Poppyseed Dressing

Instructions
 

  • Air Fry chicken at 400 degrees for 10 minutes
  • While your chicken is cooking, measure/weigh all of your other ingredients and set each aside.
  • Pour your dressing into each condiment container.
  • Fill bottom half of each bowl with chopped romaine.
  • Once the chicken is done, cut up into bite size pieces, weigh and put into your bowls.
  • Assemble the rest of your bowls. Top with the feta cheese.

Total of 8 Weight Watchers points.
