I’m a HUGE fan of making a big bowl of this when I want easy and delicious comfort food. I thought why wouldn’t I make for an entire weeks worth of lunches?!
I actually have never had this at KFC. We don’t usually go out for fast food and with my husband being allergic to poultry, there isn’t much there that he could eat. Granted, he would be happy with a big bowl of mashed potatoes!
I put the chicken gravy in condiment containers to save from any sogginess of the chicken when reheating. If you have an air fryer, I highly recommend you reheat the chicken that way! We don’t have those at work so microwave it is and will still be DELISH!

I made this for lunch prep for this week. The only difference is that I used the Tyson black pepper herb chicken breast strips. This reduced the WW points to 7 per bowl.
Hi Lynn! That sounds delicious and such a great idea!!
