Crispy Buffalo Ranch Chicken
Buffalo Sauce and Ranch Dressing go together like peanut butter and jelly! This turned out SO delicious! The ranch dressing tones this down slightly and makes it the perfect spicy savory meal!
To cut down on the points and calories, I coated the chicken breasts, cooked and then cut into bite size pieces rather that coating each small piece. It is delicious either way but I really wanted to save on points.
Crispy Buffalo Ranch Chicken
This turned out so yummy and I can't wait to have them for lunch this week. This would be really good with mac and cheese too but that would be more points than what I was willing to have this week. You can cut your chicken into bite size pieces then coat each one with cornstarch. I didn't want to add those points so stuck with coating just each breast with cornstarch. You still get a crisp to ech bite.
Equipment
- 1 Panini Press
- 1 Rice Cooker
Ingredients
- 7 oz Chicken Breast (skinless)
- 1 tbsp Bolthouse Farms Ranch Dressing
- 1 tbsp Cornstarch
- 1/3 cup Franks RedHot Buffalo Sauce
- 1 cup White Rice
Instructions
- Preheat Panini to 425
- Start your rice cooking in your rice cooker
- Dip each breast into your cornstarch, then buffalo sauce
- Place your chicken into panini press and cook for 20 minutes
- You will need to do this in two batches
- Once chicken is done, weigh out, cut into bite size pieces nd mix in with more buffalo sauce
- Measure out your rice into each container
- Add your chicken to each container
- Top with drizzle of ranch and diced green onions
