BBQ Pulled Pork and Mac & Cheese
This combo is such comfort food. Macaroni and cheese by itself is pure comfort but then add BBQ pork and YUM it’s perfect!
I have been in love with Al Dente pasta. It is lower in carbs, calories and points but you would never know it! It tastes just like your normal pasta! You must try it!
BBQ Pulled Pork and Mac & Cheese
I have been loving having pasta recently! Tonight I was craving macaroni and cheese so I made my own lighter version along with pulled pork.
Equipment
- 1 Pressure Cooker
- 1 Pasta/Sauce Pan
Ingredients
- 5 oz Pork Shoulder
- 3/4 cup Al Dente Carba-Nada Pasta (dry)
- 1/3 cup Unsweetened Vanilla Almond Milk
- 1 tsp Paprika
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1-1/2 tsp Yellow Mustard
- 2 slices Velveeta Cheese
- 2 oz Lite 3 Cheese Blend
- 1 oz Grated Parmesan Cheese
Instructions
- Cook your pork on the meat cycle in the pressure cooker with a can of beer poured on top.
- Once your meat has 15 minutes left, boil your pasta.
- Once your pasta is done, drain MOST of the water.
- Pour in your almond milk, seasonings and cheeses then stir!
- Take your portion of pork out to weigh then shred and mix with sugar free BBQ sauce.
- Add your pasta to a bowl then top with pulled pork, drizzle of BBQ sauce and fresh parmesan cheese!
Notes
Total of 18 Weight Watchers points.
Pork is higher in points so you will want to plan for this but it is worth it!!
