Blackened Chicken Street Corn Pasta

WOW I cannot tell you enough just how delicious this turned out! I could eat street corn out of bowls every single day. I promise I don’t BUT I do love it that much!

I enjoy my blackened chicken street corn crunchwrap so much that I decided to make a past bowl out of it. WOW it sure was DELISH!


Blackened Chicken Street Corn Pasta

I have been on a past kick recently and for those how know me they are all in shock!
I'm not a big pasta fan but the few I have recently made have all been incredibly delicious. I just may have become slight obsessed with pasta now!

Equipment

  • 1 Air Fryer
  • 1 Pasta/Sauce Pan
  • 1 Fry Pan
  • 1 Large Mixing Bowl

Ingredients
  

  • 3/4 cup Al Dente Carba Nada Fusilli Pasta (dry)
  • 2 ear Corn on the Cob
  • 7 oz Tyson Blackened Chicken
  • 1/8 cup Light Sour Cream
  • 2-2/3 tbsp Light Mayo
  • 1 Lime
  • 1 tbsp Fresh Chopped Cilantro
  • 1/8 cup Diced Red Onion
  • 1 small Mini Sweet Red Pepper
  • 1/8 cup Chopped Green Onions
  • 1 tsp Chili Powder
  • 1/2 tsp Dak's Blackened Seasoning
  • 1 tbsp Grated Parmesan
  • 1/3 oz Cotija Cheese

Instructions
 

  • Air fry chicken at 400 for 10 minutes
  • Boil your pasta until done (usually 10ish minutes)
  • Cut off the corn from your cobs and fry in Pam along with some of your chili powder. Once some kernels turn darker, pull off and set aside
  • Cut up all your veggies
  • Mix your sour cream, mayo and juice of 1/2 your lime then set aside
  • Once chicken is done, cut into bite size pieces
  • Pour cooked pasta in to your mixing bowl
  • Add chicken, veggies, 1/4 of your parmesan, cotija cheese, corn and dressing mixture and stir all together
  • Top with rest of your grated parmesan, more of your seasonings and drizzle of more sour cream if you wish!

Notes

Total of 10 Weight Watchers points!
Feel free to add more dressing mixture in if you want it more creamy! Just watch the points!
