Hash Brown Egg Bowl Meal Prep

I love having eggs for breakfast and when you can turn a meal prep into something filling and full of protein then it is a winner!

Some could call this a casserole…I call it DELISH! There are so many different variations to this dish that you could never get bored.


Hash Brown Egg Bowl Meal Prep

I decided to change it up for my breakfasts this week with eggs instead of baked oats. Don't get me wrong, I love baked oats but thought I would make something new!
These were so extremely easy and turned out AMAZING! You can use any meat you want or veggies or both! I had bacon pieces on hand so I used those and WOW it turned out delish!

Equipment

  • 1 Mixing Bowl
  • 4 Glass Lunch Containers

Ingredients
  

  • 4 cups Ore Ida Shredded Hash browns (frozen)
  • 12 large Eggs – scrambled
  • 8 tbsp Bacon Pieces (I use Kirkland)
  • 1/2 cup 3 Cheese Lite Shredded
  • 1 tsp Kinder's Butter Steakhouse Seasoning

Instructions
 

  • Preheat oven to 350
  • Spray your lunch containers with non stick spray (I use Pam)
  • Set them onto a cookie sheet
  • Put 1 cup each of your hasbrowns into your containers
  • Add seasoning to your hashbrowns
  • Pour your bacon pieces on top
  • Pour your scrambled eggs evenly into each bowl and top with cheese
  • Bake for 35 minutes

Total of 4 Weight Watchers points per serving!

    1. Hello! I reheat for 2-1/2 minutes in the microwave. I sometimes will top with sugar free maple syrup or ketchup. 😉

    1. HI Nelly! I am so glad you enjoyed it! It can last up to 5 days. I meal prep usually on Sunday’s and the last one I eat is Friday.

  1. do you cook your scrambled eggs before you add them to the dishes or do you just put the egg mixture in on top of the hash browns?

  2. what size are the glass containers?
    can the recipe be followed and then freeze?
    what would the reheating instructions be then?

    1. Sorry for being so late here! They are 5×7. You can do a search on Amazon for glass lunch containers with pink lids and they will come right up! I keep them in the fridge but yes that can be kept in the freezer.
