Southwest Chicken Stuffed Acorn Squash

HELLO FALL! This truly is the best time for produce all year! I love all Fall squash but this right here is the first time I’ve ever had acorn squash. I know…I’m crazy right?!

Stuffed squash is one of the easiest and most adorable recipes. I enjoy roasting in the oven or using the air fryer. Once I am done with my pics I go crazy and dump it all into a big bowl and pull the skin off, mix and dig in. Call me nuts but trust me it is DELISH!


Southwest Chicken Stuffed Acorn Squash

Well, let me just say that I'm so excited for Fall squash! There are so many ways to make them and eat them that I will be having so much fun making recipes and sharing with you all the yummy ways I make them all!
These stuffed acorn squash is AMAZING with the combo of savory and slight sweetness. I am in love with squash!

Equipment

  • 1 Oven
  • 1 Fry Pan

Ingredients
  

  • 1 Acorn Squash
  • 6 oz Tyson Blackened Chicken
  • 1/2 cup Roasted Corn
  • 1/2 cup Caramelized Onion
  • 2 mini Sweet Red Pepper
  • 3/8 cup Lite 3 Cheese Blend Shredded
  • 1/2 tbsp Fresh Cilantro
  • 1 Diced Green Onion
  • 2 tbsp Light Sour Cream
  • 1 tsp Lime Juice
  • 1 tbsp Salsa Con Queso

Instructions
 

  • Preheat oven at 425
  • Slice squash and spoon out seeds
  • Place squash upside down on a cookie sheet and stab with a fork
  • You can drizzle with EVOO or butter spray but optional
  • Bake for 45 minutes
  • Dice and caramelize your onions. I use a high heat and add small amounts of water to turn onions brown
  • Warm up corn and set aside
  • Chop up your peppers, green onions and cilantro
  • Air fry chicken at 400 for 9 minutes
  • Once chicken is done, cut into bite size pieces
  • Mix all your ingredients in a bowl
  • Once your squash is done, turn right side up, stuff, sprinkle shredded cheese and broil until cheese is melted
  • Drizzle cheese sauce, sour cream and lime
  • ENJOY!
