Ham and Turkey Breakfast Sandwich

Meal prepping is my most important way to stay successful with my eating. I have so many delicious food options at work but to keep my Weight Watchers points down and tracked, this is the easiest way to do it.

Breakfast sandwiches are easy to make and yummy to eat at the office. If you have a toaster at your work, use that. I don’t so the microwave is how I heat my sandwich and it tastes great!


Ham and Turkey Breakfast Sandwich

I’ll definitely be enjoying my breakfast this week! I always love a delicious breakfast sandwich.
We have a Starbucks and a cafe where I work so I have plenty of breakfast options but the best is to make it yourself and bring from home!

Cook Time 15 minutes

Equipment

  • 1 Stove
  • 1 Fry Pan
  • 1 Small Mixing Bowl

Ingredients
  

  • 4 English Muffins (I use Franz Original for less points)
  • 6 Large Eggs (you can stick with 4 if you wish)
  • 2 oz Deli Ham (stick with smoked or no sugar)
  • 1-1/2 oz Deli Smoked Turkey
  • 4 slices Velveeta

Instructions
 

  • Whisk your eggs and pour into a fry pan at medium heat
  • While your eggs cook, separate out your meat. I pay mine with a paper towel to release some of the wetness
  • Slice your english muffins
  • Remove the wrapping on your Velveeta slices
  • Flip your eggs when there is hardly any liquid left on the top then set aside
  • Cut your egg in four sections and mend if you want to fit your muffins
  • Assemble your sandwiches then wrap with foil and stick in the fridge!

Notes

Total of 5 Weight Watchers points!
To reheat, wrap with a paper towel and microwave for 45 seconds. If you have a toaster then toast the muffin and heat the remaining in the microwave.
