Equipment

  • 1 Microwave
  • 1 Medium Mixing Bowl
  • 4 Glass Lunch Containers
  • 4 Condiment Containers

Ingredients
  

  • 1-1/2 lbs Chicken Breast (shredded) see my Crockpot Mild Chipotle Adobo Shredded Chicken Recipe!
  • 2 cups Roasted Corn (Trader Joes)
  • 2 cups Cilantro-Lime Rice (Uncle Bens)
  • 1 cup Shredded Mixed Cabbage

Fresh Peach Salsa

  • 3 medium Peaches
  • 1 Mini Sweet Red Pepper (diced)
  • 1/2 cup Red Onion (diced)
  • 3 tbsp Fresh Cilantro (chopped)
  • 1 small Jalapeño
  • 1 tbsp Lime Juice

Creamy Chipotle Ailoi

  • 1/2 cup 0% Greek Yogurt Plain
  • 2 Adobo Peppers in sauce (can)
  • 1/3 tbsp Adobo Pepper Sauce
  • 1 tbsp Dijon Mustard
  • 1 tbsp Honey (I use Wholesome Yum Keto)
  • 1/2 tsp Garlic Powder

Instructions
 

  • Chop/Dice all of your fruit and veggies to make your salsa.
  • Mix your lime juice in with the rest of your salsa ingredients and let sit.
  • Blend your aioli ingredients in your blender then pour into your condiment containers and set aside.
  • Heat up your rice and corn in the microwave then set aside.
  • I used chicken I had previously made.
  • I layered the bottom of my bowls with shredded cabbage to give me more food and veggie!
  • Add your chicken, rice, corn and salsa.
  • Drizzle with honey, add lime wedge and your condiment container. Take a pic because they look AMAZING!
  • Put your lid on the condiment containers. If you have room, leave them in your meal prep bowls, cover and place in the fridge. ENJOY!
