Mini Hawaiian BBQ Chicken Pizza Quesadillas

HOLY HOT MESS these were so stink’n good and makes me want to head out to Hawaii again! There’s just something delicious when it comes to the combo of bbq chicken and pineapple.

I dip mine into bbq sauce because why wouldn’t I want extra sauce?! Let me know if you try these!!


Mini Hawaiian BBQ Chicken Pizza Quesadillas

These look like a hot mess but trust me when I say…these were out of this world!
Are you a bbq and pineapple lover? I sure am and these satisfied my strong craving for both a bbq chicken pizza and a quesadilla!

Equipment

  • 1 Air Fryer
  • 1 Fry Pan

Ingredients
  

  • 2 Cut da Carb Flatbread
  • 10 oz Tyson Frozen Seasoned Rotisserie Chicken
  • 6 tbsp Bacon Pieces/Bits (I use Kirkland brand)
  • 1-1/2 cup Lite Shredded Mozzarella (I use Trader Joe's)
  • 1/4 cup Sugar Free BBQ Sauce (I use GHughes)
  • 1/2 cup Pineapple Tidbits
  • 1/2 cup Chopped Red Onion
  • 1 I Can’t Believe It’s Not Butter Spray

Instructions
 

  • Air fry the chicken at 400 for 10 minutes.
  • While the chicken is cooking, cut up your red onion.
  • Warm up your bacon pieces in the microwave so they get slightly crispy.
  • Once the chicken is done, cut up into bite size pieces and set aside.
  • Lay out your flatbread
  • Layer the middle of your flatbread with your ingredients; starting and ending with ½ each of shredded cheese. This helps melt the cheese!
  • Fold up like a present starting with the bottom of your flatbread, then the bottom left corner, side…etc. *See my Instagram Story Highlight for a how-to video!*
  • Spray your folded side down with ICBINB and put in your frypan. Give it a couple minutes on level 7 (med/high) so it turns golden and crispy.
  • Spray the top of your crunchwrap with ICBINB and flip.
  • Once that side is golden, spray the sides and use your spatula to hold one side up and the your ICBINB bottle for the other side. Keep turning the wrap all around so it gets the sides golden.
  • When done, place on a mat and cut in half then half again to make smaller mini quesadillas! ENJOY!

Notes

Total of 12 Weight Watchers points for half of the plate = 4 mini quesadillas!
