Skinny BBQ Chicken Mac & Cheese
This is a delicious comfort food lunch meal prep! It is very hard to find a lower point elbow mac & cheese solution. I found chickpea Banza pasta and it turned out delicious.
My Mother In-Law makes delicious mac & cheese that my husband and son LOVE! Of course she uses full fat butter and cheeses which makes it amazing but it’s almost made with love and nobody will make it better.
This is a lower fat and point version that still is delicious!!
Skinny BBQ Chicken Mac & Cheese
HOLY CHICKEN this meal prep turned out delicious! Comfort food at its finest right here. There aren't a lot of good lower point pasta's out there, especially elbow macaroni. This Banza pasta is good and lower in points because it is made with chickpeas!
Equipment
- 2 Sauce Pans
- 1 Fry Pan
- 1 Large Strainer
Ingredients
- 24 oz Diced Chicken Breast
Mac & Cheese
- 12 oz Banza Elbow Macaroni Pasta
- 2 Laughing Cow White Cheddar Wedges
- 1 cup Unsweetened Almond Milk
- 4 Velveeta Cheese Slices
- 4 oz Lite Mozzarella Shredded Cheese
- 2 oz Lite 3 Cheese Blend Shredded
- 2 tsp Yellow Mustard
- 1 tsp Garlic Salt
- 2 tsp Kinders BBQ Rub Seasoning
Skinny BBQ Sauce
- 1 cup Sugar Free Ketchup
- 6 Tbsp Worcestershire
- 4 tbsp Hot Sauce
- 4 tbsp Apple Cider Vinegar
- 8 tbsp Swerve Brown Sugar
Instructions
- Dice up your chicken breast
- Pan fry chicken until done then set aside
- While your chicken cooks, boil your pasta
- Weigh out your shredded cheeses, unwrap the velveeta and set it all aside
- Mix your BBQ sauce ingredients in a sauce pan, bring to a boil then turn down to simmer
- Once pasta is done, strain then dump back into sauce pan or large mixing bowl
- Add to your pasta the cheeses, almond milk, mustard, seasonings and mix until it all is melted together
- Pour some of your BBQ sauce into small condiment containers (optional)
- Put your cooked chicken back into your fry pan and add remaining BBQ sauce
- Assemble your bowls and add garnish of your choice

What size are your meal prep bowls & where did you find them?
They are 5 x 12 and I got them on Amazon. You can do a search of glass storage containers pink lids and they will come up.
Is the kinder bbq rub seasoning just the original or is it different. There are so many Bbq rub seasonings by Kinder.
