Teriyaki Ground Beef and Rice with Yum Yum Sauce

The majority of my lunch meal preps are made with chicken breast. With it being zero points it’s a favorite choice. My other reason is because my husband is allergic to all poultry. So I try to fit in chicken as much as possible at my lunch time.
I decided to change things up this week though. I love beef and the leanest choice for me is the 96/4% ground beef. I always have some in my fridge or freezer as I love to make taco bowls, salads and beef crunchwraps. This meal prep is one of my new favorites!
You can save on points with this one by using cauliflower which helps also if you prefer low carb.




Teriyaki Ground Beef and Rice with Yum Yum Sauce
Equipment
- 1 Large Fry Pan
- 1 Small Sauce Pan
- 1 Pressure/Rice Cooker
Ingredients
- 1-1/2 lbs 96/4% Ground Beef
- 4 servings Dak's Asian Zing
- 1/4 cup Chopped Green Onions
- 2-2/3 cups White Rice
- 1 package Mixed color Coleslaw/Cabbage shredded
Teriyaki Sauce
- 3 tbsp Wholesome Yum Keto Honey Substitute
- 3/4 cup Swerve Brown Sugar Substitute
- 2 tsp Sesame Oil
- 3 tbsp Seasoned Rice Wine Vinegar (Mirin)
- 3 tsp Squeezed Minced Ginger
- 2 tsp Squeezed Minced Garlic
- 1 cup Tamari Soy Sauce (low sodium)
Light Yum Yum Sauce
- 1/2 cup Fage 0% Plain Greek Yogurt
- 1 tsp GHughes Sugar Free Ketchup
- 1/8 tsp Paprika
- 1/8 tsp Garlic Powder
- 1/8 tsp Cayenne Pepper
- 1/4 tsp Swerve Granulated Sugar Substitute
- 1/2 tbsp Seasoned Rice Wine Vinegar
- 1 tsp Unsweetened Vanilla Almond Milk (or plain)
- 1 tsp Extra Virgin Olive Oil
Instructions
- Cook your rice in either a pressure cooker or rice cooker
- Fry up your ground beef with the Asian Zing seasoning
- While the rice and beef are cooking mix up your yum yum sauce ingredients and place in the fridge
- Add all your teriyaki sauce ingredients to a sauce pan and bring to a quick boil then set aside
- Once your beef is cooked, add in your teriyaki sauce and green onions then simmer for 5 minutes then turn on the lowest setting while you wait for the rice to be done
- Dice up your sweet red peppers and mix with your slaw.
- Once your rice is done, add 2/3 cup to each container.
- Add in your slaw mix and ground beef evenly amongst your bowls
- Top with more green onions, red pepper flakes, white and black sesame seeds (optional)
