Raspberry Balsamic Rosemary Chicken

If you love raspberries, balsamic and rosemary then why not combine them all? The combo is incredibly delicious and the smell in your kitchen while making your sauce is amazing!

I always air fry my chicken instead of baking or pan frying. It is super easy and still turns out delicious! I usually cook at 400 degrees for 15 minutes per batch of chicken which means not a lot of touching.


Raspberry Balsamic Rosemary Chicken and Rice Bowls

These turned out AMAZING! They is so much flavor without any of the guilt. Only 4 Weight Watchers points for the chicken!
I love having rice and a veggies along side all of my chicken lunch meal preps. It is filling and still low in points.

Equipment

  • 1 Air Fryer
  • 1 Pressure/Rice Cooker
  • 2 Sauce Pans
  • 2 Large Mixing Bowls
  • 1 Callander/Strainer
  • 4 Glass Lunch Containers

Ingredients
  

  • 1-1/2 lbs Chicken Breast
  • 1 tsp Ground Thyme
  • 1/3 tsp Black Pepper
  • 1/2 tsp Himalayan Pink Salt
  • 2 bags Long Stem Broccoli
  • 4 cups Jasmine Rice
  • 1 Lime (cut into wedges)
  • Several fresh raspberries to top

Raspberry Balsamic Rosemary Sauce

  • 2/3 cup Sugar Free Raspberry Preserves
  • 4 tbsp Balsamic Vinegar
  • 3 tbsp Keto Honey Alternative (I use Wholesome Yum)
  • 1 cup Fresh Raspberries
  • 1/3 cup Sweet Onion (diced)
  • 2 tsp Minced Garlic
  • 2 Rosemary Swigs (chopped)

Instructions
 

  • Cut up your chicken breast and season with ground thyme, salt and pepper. Mix and set aside.
  • Start cooking your rice either in a rice cooker or pressure cooker
  • Air fry half of your chicken at 400 for 15 minutes, mixing it up half way through.
  • Mix your sauce ingredients in a sauce pan, bring to a boil then turn down to simmer.
  • Empty your cooked chicken into a clean bowl and cook your 2nd batch of chicken
  • Start boiling your water for the broccoli
  • Once your 2nd batch of chicken is done, boil your broccoli for just a couple minutes then strain
  • When your rice beeps, pour your sauce over your chicken, mix and let sit
  • Divide your rice into 1 cup for each of your lunch bowls
  • Add your chicken to one side and broccoli to the other
  • Top with raspberries and lime wedges
